To preserve the aromas and properties of extra virgin olive oil, it is important to store it away from light, heat, and oxygen, in tightly closed and preferably dark bottles. Avoid storing in the refrigerator or cold places, as the gelling of the oil and its subsequent return to liquid form causes a process of sensory (taste and smell) and nutraceutical impoverishment, accelerating the premature aging of the product.

Freshly extracted extra virgin olive oil has an opaque color, caused by the presence of impurities (parts of the pulp, water, organic residues present on the olives). Filtering extra virgin olive oil (with cellulose filters) is essential for eliminating impurities, ensuring proper preservation over time and preserving its organoleptic and nutritional properties.
